In Greece there are various types of armenian cucumber, mainly in the island regions, such as Crete, Mykonos, Chios and Kythira. As with cucumbers and pumpkins, armenian cucumber does not tolerate low temperatures. However, by planting the spring - which has overtaken the risk of late frosts - in places full of sun and warm exposure, the armenian cucumber proves to be particularly versatile and productive. The armenian cucumber makes best use of limited gardens, grows in particularly poor soils and overcomes excess heat without loss. The fruit of the plant is not allowed to grow too much because then it becomes immune. For stronger, tasty results are cut early in the morning. If they are not consumed immediately, they are sprayed with iced water so they can be kept in the fridge for several days. It is an excellent source of vitamin C and is sodium free.
